    Prepare the Chicken

    Begin by preheating your oven to 375°F (190°C). Take the chicken breasts and place them between two pieces of plastic wrap. Use a meat mallet to pound them to an even thickness, about 1/2 inch thick.

    Season the Chicken

    Remove the plastic wrap and season both sides of the chicken breasts with salt and black pepper.

    Set Up Breading Station

    In one shallow bowl, place the all-purpose flour. In a second bowl, beat the eggs. In a third bowl, place the breadcrumbs.

Cooking

    Bread the Chicken

    Dredge each chicken breast in flour, shaking off any excess. Then dip it into the beaten eggs, allowing the excess to drip off. Finally, coat the chicken in breadcrumbs, pressing down to adhere.

    Fry the Chicken

    Heat the olive oil in a large skillet over medium heat. Once hot, carefully place the breaded chicken breasts in the skillet. Cook for about 4-5 minutes on each side, or until golden brown and cooked through. Remove the chicken from the skillet and place them on a paper towel to drain excess oil.

    Assemble the Dish

    In a baking dish, spread a thin layer of tomato sauce on the bottom. Place the fried chicken breasts on top of the sauce. Spoon more tomato sauce over each piece of chicken, then sprinkle with mozzarella and Parmesan cheese.

    Bake the Chicken Parmigiana

    Place the baking dish in the preheated oven and bake for about 20-25 minutes, or until the cheese is bubbly and golden. Remove from the oven and let it cool for a few minutes before serving.
