    Prepare the Ingredients

    Wash and dice the potatoes into bite-sized pieces. Clean and slice the mushrooms. Chop the onion and mince the garlic. Slice the vinegar peppers.

    Season the Chicken

    In a large bowl, season the chicken thighs with salt, black pepper, paprika, dried oregano, and red pepper flakes. Mix well to coat the chicken evenly.

Cooking

    Sear the Chicken

    In a large skillet, heat olive oil over medium-high heat. Add the seasoned chicken thighs and sear them for about 5 minutes on each side, or until golden brown. Remove chicken from the skillet and set aside.

    Sauté the Vegetables

    In the same skillet, add the chopped onion and minced garlic. Sauté for 2-3 minutes until they become translucent. Add the diced potatoes and cook for 5 minutes, stirring occasionally.

    Add Mushrooms and Peppers

    Stir in the sliced mushrooms and vinegar peppers, cooking for an additional 3-4 minutes until the mushrooms soften.

    Combine Ingredients

    Return the seared chicken thighs to the skillet. Pour in the chicken broth and white wine (if using). Bring to a simmer and cover the skillet. Cook on low heat for about 30 minutes, or until the chicken is cooked through and the potatoes are tender.

    Once done, remove from heat and let it rest for a few minutes. Serve the Chicken Murphy hot, garnished with fresh herbs if desired.
