Prep the Chicken
Cut the boneless chicken breasts into strips, about 1 inch wide.

Set Up Breading Station
In three separate shallow bowls, place the flour in the first, whisk the eggs in the second, and the breadcrumbs mixed with salt, black pepper, garlic powder, and onion powder in the third.

Bread the Chicken
Dip each chicken strip into the flour first, shaking off excess, then into the egg, allowing any excess to drip off, and finally into the breadcrumb mixture, pressing gently to adhere.

Heat the Oil
In a large skillet, heat the olive oil over medium heat.

Cook the Chicken Fingers
Once the oil is hot, add the breaded chicken strips in batches, cooking for 3-4 minutes on each side until golden brown and cooked through. Drain on paper towels.

Melt the Cheeses
In a medium saucepan over low heat, combine the sharp cheddar cheese, cream cheese, and milk.

Stir and Combine
Stir continuously until the cheeses are melted and the mixture is smooth.

Add Seasoning
Add the garlic powder, jalapeños (if using), and salt to the cheese mixture. Stir until well combined and heated through.
