For the Linguini

Method

Prepare the Marinara Sauce

  1. 1

    Sauté Garlic

In a large saucepan, heat the olive oil over medium heat. Add the minced garlic and sauté until fragrant, about 1-2 minutes.

  2. 2

    Add Tomatoes and Seasonings

Stir in the crushed tomatoes, oregano, basil, red pepper flakes (if using), salt, and black pepper. Bring to a simmer.

  3. 3

    Simmer Sauce

Reduce the heat to low and let the marinara sauce simmer for about 20-25 minutes, stirring occasionally.

  4. 4

    Finish Sauce

Taste and adjust seasoning if necessary. Keep warm until ready to serve.

Prepare the Calamari

  1. 5

    Prepare Calamari

In a bowl, combine the all-purpose flour, salt, and black pepper. Dredge the calamari rings in the flour mixture, shaking off any excess.

  2. 6

    Heat Oil

In a deep frying pan, heat the oil over medium-high heat until it reaches 350°F (175°C).

  3. 7

    Fry Calamari

Carefully add the dredged calamari to the hot oil in batches, frying for about 2-3 minutes or until golden brown. Remove with a slotted spoon and drain on paper towels.

Cook the Linguini

  1. 8

    Boil Water

In a large pot, bring salted water to a boil.

  2. 9

    Cook Linguini

Add the linguini pasta to the boiling water and cook according to package instructions until al dente, usually about 8-10 minutes.

  3. 10

    Drain Pasta

Once cooked, drain the linguini and set aside.

Assemble and Serve

  1. 11

    Combine and Serve

In a large serving bowl, combine the cooked linguini with the marinara sauce, tossing to coat. Top with the fried calamari and garnish with chopped parsley. Serve immediately.
