    Boil the Eggs

    Place the eggs in a saucepan and cover them with cold water. Bring to a boil over medium-high heat. Once boiling, cover the pan, turn off the heat, and let the eggs sit for 12 minutes.

    Cool and Peel

    Transfer the eggs to an ice bath to cool for about 5 minutes. Once cool, peel the eggs and slice them in half lengthwise.

    Make the Filling

    Remove the yolks from the egg halves and place them in a mixing bowl. Add mayonnaise, Dijon mustard, salt, and black pepper to the yolks. Mash and mix until smooth.

    Add Bacon and Chives

    Crumble the cooked bacon and add it to the yolk mixture along with chopped chives. Stir until well combined.

    Fill the Eggs

    Spoon or pipe the yolk mixture back into the egg whites.

    Garnish and Serve

    Top with additional crumbled bacon and chives for garnish. Serve immediately, or chill before serving.
