    Prepare the Potatoes

    Wash and cut the Russet potatoes into thin strips to create fries. Soak the cut potatoes in cold water for at least 30 minutes to remove excess starch.

    Bake the Fries

    Preheat the oven to 425°F (220°C). Drain and pat the soaked potatoes dry. Toss them in a large bowl with olive oil, salt, and black pepper until evenly coated. Spread the fries in a single layer on a baking sheet.

    Cook Until Crispy

    Bake the fries for 25-30 minutes, flipping halfway through, until they are golden brown and crispy.

    Add Flavor

    Once the fries are done, remove them from the oven and drizzle with truffle oil. Sprinkle the chopped parsley, rosemary, and grated Parmesan cheese over the hot fries, tossing to combine.

    Make the Chive Mayo

    In a small bowl, mix together mayonnaise, chopped chives, and a pinch of salt. Adjust to taste.
