Cook the Fettuccine
In a large pot of salted boiling water, cook the fettuccine according to package instructions until al dente. Drain and set aside.

Sauté the Shrimp and Crawfish
In a large skillet, heat olive oil over medium heat. Add minced garlic and sauté for about 30 seconds until fragrant. Add shrimp and cook for 2-3 minutes until they turn pink. Then, add crawfish tails and cook for an additional 2 minutes. Season with salt and black pepper.

Add Tomatoes and Spinach
Stir in the cherry tomatoes and fresh spinach, cooking until the spinach wilts and the tomatoes soften, about 2-3 minutes.

Make the Sherry Cream Sauce
Pour in the sherry wine and let it simmer for about 2 minutes. Then add the heavy cream, stirring to combine. Allow the sauce to simmer for another 5 minutes, until slightly thickened.

Combine Pasta and Sauce
Add the cooked fettuccine to the skillet, tossing to coat the pasta in the sauce. Stir in the fresh herbs and adjust seasoning with salt and pepper as needed.

Plate the shrimp and crawfish fettuccine, garnishing with additional fresh herbs if desired. Enjoy!
