    Prepare the Glaze

    In a small saucepan over medium heat, combine brown sugar and bourbon. Stir until the sugar dissolves and the mixture slightly thickens. Remove from heat and set aside.

    Prepare the Salmon

    Preheat the grill to medium-high heat. Season salmon fillets with salt, pepper, and a drizzle of olive oil. Brush the glaze over the salmon.

    Grill the Salmon

    Place the salmon on the grill and cook for about 4-5 minutes on each side, or until the salmon flakes easily with a fork. Brush with additional glaze while grilling.

    Cook the Grits

    In a pot, bring the water to a boil. Stir in the grits and reduce the heat to low. Cook, stirring frequently, for about 20-25 minutes until creamy. Stir in 2 tablespoons of butter and season with salt and pepper.

    Prepare the Green Beans

    In a skillet, bring water to a boil and add green beans. Cook for about 4-5 minutes until tender. Drain and toss with the remaining butter, salt, and pepper.

    Plate the grilled salmon alongside a generous serving of creamy grits and buttered green beans. Drizzle more glaze over the salmon if desired.
