Crispy Grit Cakes

    Cook the Grits

    In a large saucepan, bring 4 cups of water to a boil. Add 1 tsp of salt and gradually whisk in the grits. Reduce heat to low and cook for 20-25 minutes, stirring frequently until thickened.

    Add Butter and Egg

    Once the grits are cooked, stir in the butter and beaten egg until fully incorporated. Remove from heat and let cool slightly.

    Form the Cakes

    Spread the grits into a greased baking dish, smoothing the top. Refrigerate for at least 2 hours or until firm. Once set, cut into squares or rounds.

    Fry the Grit Cakes

    In a large skillet, heat vegetable oil over medium-high heat. Dredge the grit cakes in cornmeal and fry until golden brown on both sides, about 3-4 minutes per side. Drain on paper towels.

    Prepare the Country Ham Cream

    In a small saucepan, combine the chopped country ham and heavy cream. Cook over low heat until the ham is heated through and the cream is slightly thickened. Stir in Texas Pete® hot sauce to taste.

    Sauté the Onions

    In another skillet, sauté the sliced onions until caramelized, about 10 minutes.

    Serve

    Plate the crispy grit cakes, drizzle with country ham cream, and top with sautéed onions and freshly cracked black pepper.
