Prepare the Catfish
Rinse catfish fillets under cold water and pat dry with paper towels.

Marinate
Soak the fillets in buttermilk for at least 30 minutes to tenderize and add flavor.

Prepare the Breading
In a shallow dish, mix cornmeal, flour, salt, black pepper, and cayenne pepper.

Coat the Catfish
Remove fillets from buttermilk, allowing excess to drip off. Dredge each fillet in the cornmeal mixture, pressing lightly to adhere.

Fry the Catfish
In a large skillet, heat vegetable oil over medium-high heat. Fry the catfish fillets for 4-5 minutes on each side, or until golden brown and cooked through.

Remove the fried catfish and place them on a paper towel-lined plate to drain excess oil.
