Prepare the Pork Chops
Rub the pork chops with Cajun seasoning, salt, black pepper, and olive oil. Let them marinate for at least 30 minutes.

Make the Bacon-Onion Jam
In a skillet, cook the bacon over medium heat until crispy. Remove and chop into small pieces. In the same skillet, add diced onion and sauté until caramelized. Add brown sugar and apple cider vinegar, stirring until combined. Add the chopped bacon back into the skillet and mix well. Remove from heat and set aside.

Prepare the Maque Choux
In a separate pan, heat a little olive oil over medium heat. Add corn kernels, diced red bell pepper, and sauté until tender. Stir in heavy cream and simmer until thickened. Season with salt and pepper to taste. Add sliced green onions just before serving.

Serve
Plate the grilled pork chops and top with bacon-onion jam. Serve alongside the Maque choux.
