1. Prepare the Watermelon Juice
Blend fresh watermelon until smooth, then strain through a fine mesh sieve to obtain 4 oz of fresh watermelon juice.
2. Mix the Drink
In a shaker, combine the Del Maguey Mezcal, fresh watermelon juice, and house grenadine. Add ice cubes and shake well for about 15 seconds.
3. Serve the Drink
Strain the mixture into a chilled glass filled with ice. Garnish with fresh mint leaves.
4. Add the Balsamic Caviar
Top the drink with a teaspoon of balsamic caviar for an extra burst of flavor.
