Mirabelle Plum Preparation

    Prepare the Plums

    Wash and halve the mirabelle plums, removing the pits. In a saucepan, combine the plums, sugar, and lemon juice. Cook over medium heat until the plums are soft and the mixture is slightly thickened, about 10-15 minutes. Remove from heat and let cool.

Cinnamon Espuma Preparation

    Prepare the Gelatin

    Soak the gelatin sheets in cold water for about 5 minutes until soft. In a small saucepan, heat the water and dissolve the soaked gelatin over low heat. Let it cool slightly.

    Mix the Cream

    In a mixing bowl, whisk together the heavy cream, sugar, and ground cinnamon until soft peaks form. Slowly incorporate the gelatin mixture into the whipped cream, being careful not to deflate it.

    Chill the Espuma

    Transfer the cinnamon cream mixture into a siphon or a piping bag and refrigerate for at least 30 minutes to set.

Assembly

    Serve the Dish

    In serving glasses, layer the caramelized mirabelle plum mixture at the bottom and top with the cinnamon espuma. Optionally, you can garnish with a sprinkle of cinnamon or a few fresh mirabelle plums.
