Tuna Tartare

Lemon and White Wine Sabayon

Method

Tuna Tartare Preparation

    Prepare the Tuna

    Finely dice the fresh tuna and place it in a mixing bowl.

    Mix Ingredients

    Add diced avocado, finely chopped red onion, capers, soy sauce, sesame oil, lime juice, chopped cilantro, salt, and pepper. Mix gently until combined.

Croutons Preparation

    Prepare the Bread

    Preheat the oven to 180°C (350°F). Cut the bread into small cubes.

    Season and Bake

    Toss the bread cubes with olive oil, garlic powder, and salt. Spread them on a baking sheet and bake for about 10-12 minutes or until golden and crispy.

Sabayon Preparation

    Combine Ingredients

    In a heatproof bowl, whisk together egg yolks, white wine, lemon juice, sugar, and salt.

    Cook the Sabayon

    Place the bowl over a pot of simmering water (double boiler) and whisk continuously until the mixture thickens and doubles in volume, about 7-10 minutes.

Assembly

    Plate the Dish

    Spoon the tuna tartare onto a plate, drizzle with sabayon, and sprinkle croutons on top for crunch.
