Preparation
- 1
Prepare the leeks
Trim the leeks, removing the dark green tops and the root end. Slice them in half lengthwise and rinse thoroughly to remove any grit.
- 2
Char the leeks
Heat a grill or grill pan over medium-high heat. Place the leeks cut-side down on the grill and char for 4-5 minutes until grill marks appear. Flip and grill for another 3-4 minutes until tender. Remove from the grill and set aside.
- 3
Fry the leek roots
In a small frying pan, heat a little oil over medium heat. Add the chopped leek roots and fry until crispy, about 5-7 minutes. Remove and drain on paper towels.
- 4
Prepare the vinaigrette
In a bowl, whisk together the hazelnut oil, white wine vinegar, honey, salt, and black pepper until combined.
Assembly
- 5
Plate the dish
On a serving plate, arrange the charred leeks. Cut the kiwis into wedges and place them around the leeks. Drizzle the hazelnut vinaigrette over the top and sprinkle with fried leek roots and chopped hazelnuts.
