Method

Pecan Mousse

    Prepare Gelatin

    Soak gelatin sheets in cold water for about 5 minutes until softened, then drain and dissolve them in 2 tablespoons of warm water.

    Blend Pecans

    In a food processor, blend the pecans until finely ground. Mix in the powdered sugar and vanilla extract.

    Whip Cream

    In a separate bowl, whip the heavy cream until soft peaks form.

    Combine Mixtures

    Gently fold the whipped cream into the pecan mixture. Then, fold in the dissolved gelatin until well combined.

    Chill

    Pour the mousse into serving cups and refrigerate for at least 2 hours until set.

Pear Marmalade

    Prepare Pears

    Peel, core, and chop the pears into small pieces.

    Cook Pears

    In a saucepan, combine chopped pears, sugar, lemon juice, and water. Cook over medium heat until the mixture thickens, about 30 minutes.

    Let the marmalade cool and then store it in a jar in the refrigerator.
