Method

Preparation of Tartare

    Make the Tartare

    Chop the fresh strawberries and mix them with sugar and lime juice. Let it sit for 15 minutes to macerate.

Preparation of Lime Cream

    Prepare the Lime Cream

    In a saucepan, whisk together egg yolks and sugar until light. Add lime juice and zest, cook over low heat until thickened. Remove from heat, cool slightly, and fold in the heavy cream.

Preparation of Strawberry Chantilly

    Make the Chantilly

    Whip the heavy cream with powdered sugar until soft peaks form. Gently fold in the strawberry puree.

Preparation of Basil Sorbet

    Prepare the Basil Sorbet

    Blend basil leaves with water and strain. Heat the basil water with sugar until dissolved. Add lemon juice and chill the mixture before churning in an ice cream maker.

Assembly

    Assemble the Dish

    Layer the strawberry tartare at the bottom of the plate, add a dollop of lime cream, pipe the strawberry chantilly on top, and serve with a scoop of basil sorbet.
