Method

Preparation

  1. 1

    Prepare the squid

Clean the Atlantic squid by removing the head, ink sac, and innards. Rinse under cold water and cut into rings.

  2. 2

    Make the pesto

If using homemade green pepper pesto, ensure it's ready. Otherwise, prepare a store-bought version according to package instructions.

Cooking

  1. 3

    Sauté the squid

Heat a skillet over medium-high heat and add a drizzle of olive oil. Add the squid rings and sauté for 2-3 minutes until they turn opaque. Be careful not to overcook.

  2. 4

    Add flavors

Sprinkle the smoked paprika over the cooked squid and stir in the squid ink. Cook for another minute to incorporate flavors.

Plating

  1. 5

    Serve

Plate the sautéed squid and drizzle the green pepper pesto and balsamic reduction over it. Garnish with fresh parsley and lemon wedges.
