Coffee Cream
1. Make Coffee Cream
In a mixing bowl, whisk together heavy cream, instant coffee granules, sugar, and vanilla extract until soft peaks form. Set aside in the refrigerator.
Puffed Rice
2. Prepare Puffed Rice
In a saucepan, melt butter over medium heat. Stir in brown sugar until dissolved. Add puffed rice and mix until well coated. Spread on a baking sheet to cool.
Chocolate Mousse
3. Prepare Chocolate Mousse
Melt dark chocolate in a heatproof bowl over simmering water. In a separate bowl, whisk egg yolks with sugar until pale. Mix melted chocolate into egg yolk mixture. In another bowl, whip heavy cream to soft peaks. Fold whipped cream into chocolate mixture. Refrigerate until set.
Coffee Espuma
4. Make Coffee Espuma
In a small bowl, mix espresso with sugar until dissolved. Add heavy cream and whisk until frothy. Set aside.
Assembly
5. Assemble Le Café Moka
In a serving glass, layer the chocolate mousse first, then the coffee cream, and top with puffed rice. Finish with a drizzle of coffee espuma over the top.
