Method

Preparing the Lamb

  1. 1

    Season the Lamb

Preheat your oven to 400°F (200°C). Season the Ontario lamb rack with salt, black pepper, and minced garlic. Drizzle olive oil over the rack and rub the seasoning into the meat.

  2. 2

    Roast the Lamb

Place the lamb rack on a roasting pan and roast in the preheated oven for about 25-30 minutes or until the internal temperature reaches 130°F (54°C) for medium-rare. Remove from the oven and let it rest for 10 minutes.

Preparing the Spinach and Morels

  1. 3

    Sauté the Spinach

In a large skillet, heat a tablespoon of olive oil over medium heat. Add the spinach and sauté until wilted, about 2-3 minutes. Season with salt and set aside.

  2. 4

    Glaze the Morels

In the same skillet, add the glazed morel mushrooms and cook for 2-3 minutes until heated through. Stir in the lemon confit and remove from heat.

Plating

  1. 5

    Serve

Slice the lamb rack into individual chops. On each plate, create a bed of sautéed spinach, place the lamb chops on top, and spoon the glazed morels with lemon confit over the lamb. Serve immediately.
