Prepare the Lamb Saddle

    Season the Lamb

    Preheat your oven to 375°F (190°C). In a bowl, mix olive oil, minced garlic, fresh thyme, salt, and black pepper. Rub this mixture all over the lamb saddle.

    Roast the Lamb

    Place the lamb saddle in a roasting pan and roast in the preheated oven for about 45-60 minutes or until it reaches your desired doneness. Let it rest for 15 minutes before slicing.

Prepare the Barigoule Artichoke

    Clean and Prepare Artichokes

    Trim and clean the artichokes, removing tough outer leaves and cutting off the tops. Rub with lemon juice to prevent browning.

    Cook the Vegetables

    In a large pot, add olive oil and sauté shallots and diced carrots until soft. Add the artichokes, white wine, vegetable broth, salt, and black pepper. Simmer for 30-40 minutes until the artichokes are tender.

Prepare the Thyme Jus

    Make the Jus

    In a saucepan, bring the lamb stock to a simmer. Add fresh thyme, salt, and black pepper. Reduce until slightly thickened, then whisk in butter until melted and smooth.

    Plate the Dish

    Slice the lamb saddle and arrange it on a plate. Serve it with the Barigoule artichokes and drizzle with thyme jus. Enjoy your meal!
