    Prepare the Eggplants

    Slice the eggplants into 1/4 inch thick rounds. Sprinkle with salt and let them sit for about 30 minutes to draw out moisture. Rinse and pat dry.

    Cook the Eggplants

    In a skillet, heat olive oil over medium-high heat. Add the eggplant slices and sauté until golden brown on both sides, about 4-5 minutes. Set aside.

    Preheat the Oven

    Preheat your oven to 220°C (425°F).

    Assemble the Pizza

    Roll out the pizza dough on a floured surface to your desired thickness. Transfer to a baking sheet or pizza stone. Spread the tomato sauce evenly over the dough.

    Layer the sautéed eggplants over the tomato sauce, followed by pieces of fresh mozzarella cheese. Sprinkle red pepper flakes, salt, and black pepper to taste.
