Prepare the Chicken
Season the chicken breasts with salt and pepper. Heat 1 tablespoon of olive oil in a grill pan over medium heat. Grill the chicken for about 6-7 minutes on each side or until fully cooked. Remove from heat and let it rest before slicing into strips.

Cook the Bacon
In a large skillet, cook the bacon over medium heat until crispy. Remove and drain on paper towels, leaving the rendered fat in the pan.

Cook the Pasta
In a large pot of boiling salted water, cook the pappardelle according to package instructions until al dente. Reserve 1 cup of pasta water and drain the rest.

Prepare the Sauce
In a mixing bowl, whisk together the eggs, heavy cream, and grated Parmesan cheese. Add black pepper to taste.

Serve
Plate the pappardelle carbonara and garnish with additional Parmesan cheese and black pepper before serving.
