1. Prepare the Beans

Soak the Romano beans overnight in water. Drain and rinse before cooking.

2. Sauté Aromatics

In a large pot, heat the olive oil over medium heat. Add the minced garlic and sauté for about 1 minute until fragrant.

3. Add Tomatoes and Herbs

Stir in the crushed tomatoes, sage leaves, rosemary, salt, and black pepper. Bring to a simmer.

4. Cook the Beans

Add the soaked beans to the pot. Cover and simmer for about 45 minutes to 1 hour, or until the beans are tender. Stir occasionally and add water if necessary to keep the mixture from drying out.

5. Serve

Once the beans are cooked through, remove from heat. Serve topped with grated Parmesan cheese.
