Prepare the Catfish
Rinse the catfish fillets under cold water and pat them dry with paper towels.

Set up Breading Station
In one bowl, whisk together the buttermilk and eggs. In another bowl, combine the cornmeal, flour, salt, black pepper, and cayenne pepper.

Bread the Catfish
Dip each fillet into the buttermilk mixture, letting the excess drip off, then coat it in the cornmeal mixture, pressing lightly to adhere.

Heat the Oil
In a large skillet, heat the vegetable oil over medium-high heat until it reaches 350°F (175°C).

Fry the Catfish
Carefully add the breaded catfish fillets to the hot oil, frying them for about 4-5 minutes on each side or until golden brown and cooked through.

Drain and Serve
Remove the fried catfish from the oil and place them on a paper towel-lined plate to drain excess oil. Serve hot with your choice of side and dipping sauce.
