    Prepare proteins

    Pat the chicken thighs dry and cut into 1-inch strips. Season with 3/4 tsp kosher salt, 1/2 tsp black pepper, smoked paprika and cumin. Toss the shrimp with a pinch (1/4 tsp) of salt and set aside in the fridge.

    Sear chicken

    Heat 1 tablespoon olive oil in a large skillet over medium-high heat until shimmering. Add half the chicken strips in a single layer (do not overcrowd). Sear 2–3 minutes per side until golden but not fully cooked through. Transfer to a plate and repeat with remaining chicken using another 1 tablespoon oil if needed.

    Quick-cook shrimp

    Lower heat to medium. Add the shrimp to the skillet and cook 1–1.5 minutes per side until they just turn pink and curl. Remove shrimp and set aside with the chicken (they will finish cooking later). Wipe skillet if excessively browned, leaving fond.

    Sweat aromatics and veggies

    Add the chopped onion and both peppers to the hot skillet. Sauté over medium heat about 5–6 minutes until softened and translucency appears. Add the minced garlic and cook 30–45 seconds until fragrant.

    Build the sauce

    Stir in the diced tomatoes and tomato paste. Cook 2–3 minutes to mellow the tomato paste. Pour in the white wine (if using) and scrape up any browned bits, simmer 1 minute to reduce slightly. Add the chicken or seafood stock and bay leaf, then stir in oregano and crushed red pepper flakes.

    Simmer

    Return the seared chicken to the skillet, nestling it into the sauce. Simmer gently, uncovered, for 8–10 minutes until chicken is cooked through (internal temp 165°F / 74°C) and sauce has slightly thickened. Taste and adjust salt and pepper as needed.

    Finish proteins in sauce

    Add the reserved shrimp to the skillet during the last 2–3 minutes of simmering so they finish cooking in the sauce and absorb flavor. Stir in the butter, chopped cilantro, parsley, and lime juice. Remove and discard the bay leaf.

    Final seasoning

    Taste and adjust seasoning with remaining 1/4 tsp salt or pepper if needed. If you prefer more brightness, add another 1/2 tbsp lime juice or a sprinkle of cilantro.

    Spoon Pollo con Camarones over cooked white or cilantro-lime rice. Garnish with lime wedges on the side for squeezing. Serve immediately.
