Simple Syrup

Make simple syrup
Combine 1 cup granulated sugar and 1 cup water in a small saucepan. Bring to a gentle simmer over medium heat, stirring until the sugar fully dissolves (about 3–5 minutes). Remove from heat and let cool to room temperature. Transfer to a jar and chill if not using immediately.

Juice citrus
Roll the lemons and limes firmly on the counter to loosen juices. Cut each in half and juice to yield fresh lemon and lime juice. Strain the juice through a fine mesh sieve into a measuring cup to remove seeds and pulp. You should have roughly 3 lemons and 2 limes worth of juice (about 3/4–1 cup combined).

Combine juice and water
In a pitcher, combine the strained lemon-lime juice with 2 cups cold water. Taste and adjust: if juice is too tart, add reserved simple syrup a little at a time until balanced. Start with 1/4 cup syrup, then increase to taste (typically 1/4–1/2 cup total for medium sweetness).

Assemble drinks
Add chilled club soda to the pitcher or individual glasses just before serving to preserve carbonation. For a pitcher: pour 2 cups chilled club soda into the citrus-syrup mixture and gently stir once or twice to combine. If making individual glasses, fill with ice, add 1/2 cup citrus-syrup base, then top with about 1/2 cup club soda.

Garnish and serve
Tear or lightly slap mint leaves to release aroma and add to the pitcher or individual glasses (optional). Float lemon and lime wheels on top for garnish. Serve immediately while soda is fizzy.
