Prepare shrimp
Pat shrimp dry with paper towels and season lightly with 1/4 tsp kosher salt and 1/8 tsp black pepper. If using frozen shrimp, thaw completely and drain excess liquid.

Clean and slice mushrooms into 1/4-inch slices. Thinly slice the onion, mince garlic, and slice scallion greens. Mix sauce ingredients (soy sauce, oyster sauce, rice wine, sesame oil, broth, sugar, and crushed red pepper if using) in a small bowl and set aside.

Whisk cornstarch into cold water until smooth to make a slurry and set aside.

Heat a large skillet or wok over medium-high heat until very hot (about 1–2 minutes). Add 1 tablespoon neutral oil and swirl to coat.

Add the shrimp in a single layer and cook 1–1.5 minutes per side until just pink and opaque. Remove shrimp to a plate and set aside. Do not overcook.

Add the remaining 1 tablespoon oil to the hot pan. Add the sliced mushrooms and spread them out so they make good contact with the pan. Let cook, undisturbed, 2–3 minutes to brown, then stir and cook another 1–2 minutes until mushrooms have reduced and edges are golden.

Pour the prepared sauce into the pan, scraping up any browned bits from the bottom. Stir to combine and bring to a gentle simmer for 1 minute.

Return the cooked shrimp and any accumulated juices to the pan. Stir to coat and cook 30–60 seconds until shrimp are reheated.

Give the cornstarch slurry a quick stir then pour it into the pan while stirring. Cook another 1 minute until sauce thickens and becomes glossy. Taste and adjust seasoning with remaining salt and pepper as needed.

Turn off the heat and stir in sliced scallion greens. If desired, drizzle an extra 1/4 tsp sesame oil for aroma.
To Serve

Transfer the mushroom shrimp to a serving bowl or plate. Serve immediately over steamed rice, noodles, or alongside stir-fried greens.
