Combine base ingredients

In a medium bowl, stir together rolled oats, chia seeds and almond milk until evenly combined. Add vanilla extract and honey (or maple syrup) and whisk briefly. If using protein powder, add it now and mix until smooth.

Fold in the Greek yogurt to create a creamy, slightly thickened base. If the mixture is too thick, add up to 2 tablespoons more almond milk to reach desired consistency.

Let the base rest for 10 minutes so the oats and chia soften and thicken. You can refrigerate during this time for a cold bowl.

Fruit & mix-ins

While the base rests, prepare the fruit: slice the banana, dice the mango, and halve any large strawberries. Keep berries whole if small.

Gently fold the applesauce or grated apple into the oat-yogurt mixture to add natural sweetness and moisture. Then fold in half of the mixed berries and half of the banana slices so some fruit is incorporated into the base.
