Prepare Sauce Gribiche

    Make the Sauce

    In a bowl, mix together mayonnaise, Dijon mustard, capers, cornichons, parsley, chopped hard-boiled eggs, lemon juice, salt, and black pepper until well combined. Set aside.

Cook the Burger

    Grill the Wagyu Patties

    Preheat your grill or pan over medium-high heat. Season the wagyu patties with salt and pepper. Cook for about 4-5 minutes on each side for medium rare, adding a slice of Gruyere cheese on top during the last minute of cooking to melt.

    Toast the Buns

    Lightly toast the potato buns on the grill or in a toaster until golden brown.

Prepare Tobacco Onions

    Fry the Onions

    Prepare tobacco onions by thinly slicing onions, coating them in flour, and frying them in hot oil until crispy and golden. Drain on paper towels and season with salt.

Cook Truffle Fries

    Bake the Fries

    Cook frozen French fries according to package instructions. Once done, toss them in a bowl with truffle oil, grated Parmesan cheese, chopped parsley, and salt.

Assemble the Burger

    Build Your Burger

    Spread the sauce gribiche on the bottom half of the toasted potato bun. Place the cooked wagyu patty with melted Gruyere on top, followed by a generous amount of tobacco onions. Top with the other half of the bun and serve with truffle fries on the side.
