    Roast the Garlic

    Preheat your oven to 400°F (200°C). Cut the top off the head of garlic, drizzle with olive oil, wrap in aluminum foil, and roast for 30-35 minutes until soft and caramelized.

    Prepare the Spinach

    While the garlic is roasting, wash the fresh spinach and sauté it in a pan over medium heat until wilted. Remove from heat and let cool slightly, then chop it coarsely.

    Mix the Ingredients

    In a large mixing bowl, combine the softened cream cheese, Swiss cheese, grated parmesan cheese, chopped spinach, and chopped artichoke hearts. Squeeze the roasted garlic cloves into the mixture and stir until well combined.

    Bake the Dip

    Preheat your oven to 350°F (175°C). Transfer the mixture to a baking dish and spread it evenly. Bake for 25-30 minutes, or until the dip is bubbly and golden on top.

    Remove from the oven and allow to cool slightly. Serve warm with tortilla chips for dipping.
