    Prepare the Fries

    Peel the potatoes and cut them into thick strips. Rinse the fries in cold water to remove excess starch, then pat dry with a paper towel.

    Fry the Potatoes

    In a large pot, heat vegetable oil over medium-high heat. Once hot, fry the potatoes in batches until golden brown and crispy, about 5-7 minutes. Remove and drain on paper towels, then sprinkle with sea salt to taste.

    Prepare the Batter

    In a mixing bowl, combine rice flour, baking powder, salt, and black pepper. Slowly whisk in the champagne until the batter is smooth and slightly thick.

    Fry the Fish

    Heat oil in a deep fryer or large skillet over medium-high heat. Dip each Alaskan cod fillet into the batter, allowing excess to drip off, then carefully place it in the hot oil. Fry until golden brown and cooked through, about 4-5 minutes per side. Remove and drain on paper towels.

    Plate the crispy fish alongside the sea salt fries, and serve with Louie's tartar sauce on the side.
