Make the Dough
In a large bowl, combine the flour, granulated sugar, yeast, and salt. In a separate bowl, warm the milk and melt the butter together. Add the milk mixture to the dry ingredients, followed by the eggs. Mix until a soft dough forms.

Knead and Rise
Knead the dough on a floured surface for about 5 minutes until smooth. Place it in a greased bowl, cover with a cloth, and let it rise in a warm place for about 1 hour, or until doubled in size.

Shape the Beignets
Once risen, roll out the dough on a floured surface to about 1/2 inch thick. Cut into squares or rectangles.

Fry the Beignets
Heat the vegetable oil in a deep fryer or large pot to 350°F (175°C). Fry the beignets in batches until golden brown, about 2-3 minutes per side. Remove and drain on paper towels.

Dust with Powdered Sugar
While still warm, dust the beignets generously with powdered sugar.

Make the Rum Butter
In a small saucepan, melt the butter over low heat. Add the rum and stir until well combined. Serve warm with the beignets.
