Tuna Ceviche

    Prepare the Tuna

    Dice the fresh sushi-grade tuna into small cubes and place them in a glass bowl.

    Mix Ingredients

    Add lime juice, chopped red onion, cilantro, salt, and black pepper to the tuna. Mix gently and let it marinate in the refrigerator for at least 30 minutes.

Passionfruit Broth

    Combine Ingredients

    In a small saucepan, combine passionfruit pulp, fish stock, lime zest, and honey.

    Heat the Broth

    Bring the mixture to a simmer over medium heat, stirring occasionally. Simmer for 5-7 minutes, then remove from heat and set aside.

Avocado Cream

    Blend Ingredients

    In a food processor, combine ripe avocados, lime juice, minced garlic, and salt.

    Process Until Smooth

    Blend until the mixture is smooth and creamy. Set aside.

    In a small bowl, mix toasted sesame seeds, dried oregano, and chili powder until well combined.

Fried Quinoa

    Cook Quinoa

    Rinse quinoa under cold water. In a saucepan, combine quinoa and water. Bring to a boil, then reduce heat to low, cover, and simmer for 15 minutes or until water is absorbed.

    Heat oil in a frying pan over medium-high heat. Add cooked quinoa and fry until golden and crispy, about 5-7 minutes. Drain on paper towels.

Fruit Salsa

    In a bowl, mix together diced mango, pineapple, red bell pepper, and finely chopped red onion.

    Drizzle lime juice over the salsa and mix gently. Set aside.

Fried Green Plantains

    Peel the green plantains and slice them into 1-inch thick pieces.

    In a frying pan, heat oil over medium heat. Fry the plantain slices until golden brown, about 3-4 minutes per side. Drain on paper towels.
