Method

Preparing the Pork Belly

    Season the Pork Belly

    Rub the pork belly with olive oil, salt, black pepper, paprika, garlic powder, and onion powder. Make sure to cover all sides.

    Cook the Pork Belly

    Preheat the oven to 300°F (150°C). Place the seasoned pork belly in a roasting pan and cover with foil. Roast in the oven for 3-4 hours until tender. Remove the foil for the last 30 minutes to allow the skin to crisp up.

    Slice the Pork Belly

    Once cooked, let the pork belly rest for at least 15 minutes. Then slice into 1-inch thick pieces.

Making the Spicy Mayo

    Mix the Ingredients

    In a bowl, combine mayonnaise, sriracha, and lime juice. Stir until well blended. Adjust the spiciness by adding more sriracha if desired.

Pickling the Jalapeños

    Prepare the Pickling Solution

    In a saucepan, combine white vinegar, water, sugar, and salt. Bring to a boil over medium heat until the sugar dissolves.

    Pickle the Jalapeños

    Slice the jalapeños into rings and add them to the boiling pickling solution. Remove from heat and let cool. Store in a jar and refrigerate for at least 1 hour before using.

Assembling the Sliders

    Build the Sliders

    Slice the slider buns in half. Spread a generous amount of spicy mayo on the bottom half, add a slice of pork belly, a few pickled jalapeños, and a sprinkle of fresh cilantro. Top with the other half of the bun.

    Serve the sliders warm and enjoy!
