Dough Preparation

    Make the Dough

    In a large mixing bowl, combine the all-purpose flour and salt. Cut in the unsalted butter until the mixture resembles coarse crumbs. Add the egg and water, mixing until a dough forms.

    Knead the Dough

    Turn the dough onto a lightly floured surface and knead for about 5 minutes until smooth. Wrap in plastic wrap and refrigerate for 30 minutes.

    Cook the Shrimp

    In a skillet, heat olive oil over medium heat. Add minced garlic and sauté for 1 minute until fragrant. Add the shrimp and cook until they turn pink, about 3-4 minutes.

    Combine Filling Ingredients

    Remove the skillet from heat and let the shrimp cool slightly. In a mixing bowl, combine the cooked shrimp, sofrito, shredded Oaxacan cheese, chopped cilantro, lime juice, and season with salt and pepper to taste.

Assembling and Frying

    Roll Out the Dough

    After the dough has chilled, roll it out on a floured surface until about 1/8 inch thick. Cut out circles using a round cutter or a glass, about 4 inches in diameter.

    Fill the Empanadas

    Place a tablespoon of filling in the center of each dough circle. Fold the dough over to create a half-moon shape and press the edges together to seal. Use a fork to crimp the edges for a decorative touch.

    Fry the Empanadas

    In a deep skillet, heat vegetable oil over medium-high heat. Once hot, carefully add the empanadas in batches, frying until golden brown on both sides, about 3-4 minutes per side. Remove and drain on paper towels.
