Preparing the Pork Belly

    Score the Pork Belly

    Using a sharp knife, make shallow cuts in a crisscross pattern on the skin of the pork belly. This helps render the fat and get the skin crispy.

    Season the Pork Belly

    Rub the pork belly with salt, black pepper, garlic powder, paprika, and drizzle with olive oil. Make sure to coat both the skin and the meat. Let it rest for at least 30 minutes at room temperature.

    Cook the Pork Belly

    Preheat your oven to 450°F (230°C). Place the pork belly on a roasting rack in a baking tray, skin side up. Roast for 30 minutes, then reduce the temperature to 250°F (120°C) and cook for an additional 2 hours. Afterward, turn the oven back to 450°F (230°C) and roast for another 20-30 minutes until the skin is crispy.

    Rest the Pork Belly

    Remove the pork belly from the oven and let it rest for 15 minutes before slicing.

Preparing the Spicy Mango Salsa

    Combine Ingredients

    In a medium bowl, combine the diced mango, red onion, minced jalapeño, chopped cilantro, lime juice, and salt. Mix well to combine all the ingredients.

    Taste and Adjust

    Taste the salsa and adjust the seasoning if necessary. You may add more lime juice or salt according to your preference.

Serving

    Plate the Dish

    Slice the pork belly into bite-sized pieces and arrange them on a serving platter. Spoon the spicy mango salsa over the top or serve it on the side.
