Crust Preparation

Make the Crust
Preheat your oven to 350°F (175°C). In a medium bowl, combine the graham cracker crumbs, granulated sugar, melted unsalted butter, and salt. Mix until the crumbs are evenly moistened.

Form the Crust
Press the crumb mixture firmly into the bottom and up the sides of a 9-inch pie dish. Make sure it's evenly packed.

Bake the Crust
Bake the crust in the preheated oven for about 8-10 minutes or until it is lightly golden. Remove from the oven and let it cool.

Prepare the Filling
In a large mixing bowl, whisk together the sweetened condensed milk, key lime juice, egg yolks, and key lime zest until smooth and well combined.

Fill the Crust
Pour the key lime filling into the cooled pie crust, spreading it evenly.

Bake the Pie
Return the pie to the oven and bake for another 10-15 minutes, until the filling is set but still slightly jiggly in the center. Remove from the oven and let it cool to room temperature.

Chill the Pie
Refrigerate the pie for at least 3 hours or until it's fully chilled.

Make the Whipped Cream
In a mixing bowl, combine the heavy whipping cream, powdered sugar, and vanilla extract. Using an electric mixer, whip on medium-high speed until soft peaks form.

Spread or pipe the whipped cream over the chilled key lime pie just before serving.

Slice the pie into wedges and serve chilled, garnished with additional lime zest or slices if desired.
