Method

Preparation

  1. 1

    Preheat the Oven

Preheat your oven to 425°F (220°C). Grease four ramekins with butter and dust with cocoa powder to prevent sticking.

  2. 2

    Melt the Butter

In a medium saucepan, melt the unsalted butter over low heat. Once melted, remove from heat and allow it to cool slightly.

Mixing

  1. 3

    Combine Dry Ingredients

In a large mixing bowl, whisk together the all-purpose flour, granulated sugar, unsweetened cocoa powder, baking powder, and salt until well combined.

  2. 4

    Add Wet Ingredients

Add the slightly cooled melted butter, eggs, and vanilla extract to the dry ingredients. Mix until just combined, being careful not to overmix.

Baking

  1. 5

    Fill Ramekins

Divide the batter evenly among the prepared ramekins, filling each about 3/4 full.

  2. 6

    Bake

Bake in the preheated oven for 12-14 minutes, or until the edges are firm but the center is still soft.

Serving

  1. 7

    Cool and Serve

Allow the lava cakes to cool for 1 minute. Carefully run a knife around the edges, invert onto plates, and dust with powdered sugar. Serve immediately with a scoop of vanilla ice cream.
