    Prepare the Caramelized Onions

    In a skillet over medium heat, add a tablespoon of oil and sliced onions. Cook, stirring frequently, for about 15-20 minutes until the onions are golden brown and caramelized. Set aside.

    Cook the Bacon

    In the same skillet, add the bacon slices and cook until crispy. Remove from the skillet and let drain on paper towels.

    Slice the Roasted Pork

    Slice the roasted pork into thin pieces. If you don't have roasted pork, you can roast a pork shoulder seasoned with garlic, cumin, and salt for about 3-4 hours at 300°F (150°C).

Assembling the Sandwich

    Build the Sandwich

    Cut the Cuban bread in half lengthwise. On the bottom half, layer the sliced roasted pork, followed by crispy bacon, caramelized onions, and Oaxacan cheese.

    Add Pickles and Mayo

    Top the cheese with house pickles and drizzle cilantro mayo generously over the top. Close the sandwich with the top half of the Cuban bread.

    Toast the Sandwich

    Preheat a panini press or skillet over medium heat. Place the assembled sandwich in the press or skillet, and cook for about 5-7 minutes until the bread is toasted and the cheese is melted.
