Prepare the Vegetables
Begin by washing and chopping the red and green bell peppers, red onion, and tomatoes into bite-sized pieces. Mince the roasted garlic.

Sauté the Vegetables
In a large skillet, heat a tablespoon of olive oil over medium heat. Add the chopped red onion and sauté for 2-3 minutes until translucent. Then add the minced garlic, red bell pepper, and green bell pepper and cook for an additional 5 minutes, stirring occasionally.

Add Artichokes and Olives
Stir in the artichoke hearts and black olives into the skillet. Cook for another 2-3 minutes.

Combine with Tomato Sauce
Pour in the tomato sauce and stir well to combine. Let the mixture simmer for about 5 minutes to allow the flavors to meld.

Season the Mixture
Add the capers, fresh basil, and fresh oregano to the skillet. Stir to combine and season with salt and pepper to taste.

Add Cheeses
Remove the skillet from heat and sprinkle the mozzarella and Romano cheese evenly over the top of the vegetable mixture.

Bake
Preheat the oven to 375°F (190°C). Transfer the skillet to the oven and bake for 15-20 minutes, or until the cheese is bubbly and golden.
