Preparing Smoked Jalapeños

    Smoke the Jalapeños

    Preheat your smoker to 225°F (107°C). Cut the stems off the jalapeños and slice them in half lengthwise. Brush the cut sides with olive oil and sprinkle with salt. Place them in the smoker cut side up and smoke for about 1.5 hours or until they are tender and have a smoky flavor.

Making the Pimento Cheese

    Combine Cheese Mixture

    In a large mixing bowl, combine the sharp cheddar cheese, cream cheese, mayonnaise, and pimentos. Mix until well combined and creamy.

    Add Smoked Jalapeños

    Once the jalapeños are smoked and cooled, chop them finely and add them to the cheese mixture.

    Add Spices

    Sprinkle in the garlic powder, onion powder, smoked paprika, and black pepper. Mix thoroughly until all ingredients are well incorporated.

    Adjust Seasoning

    Taste the mixture and adjust seasoning if necessary. You can add more salt or spices to your preference.

Serving
