Marinate the Chicken
In a large bowl, combine the buttermilk, salt, black pepper, paprika, garlic powder, and onion powder. Add the chicken thighs, ensuring they are fully submerged. Cover and refrigerate for at least 2 hours or overnight for best results.

Prepare the Coating
In a separate bowl, mix together the all-purpose flour and cornstarch. This will be used for dredging the chicken.

Heat the Oil
In a deep skillet or fryer, heat the oil to 350°F (175°C). Use a thermometer for accuracy.

Dredge the Chicken
Remove the chicken from the marinade and allow excess buttermilk to drip off. Dredge each piece in the flour-cornstarch mixture, ensuring an even coating.

Fry the Chicken
Carefully place the coated chicken pieces into the hot oil. Fry for about 6-8 minutes per side, or until golden brown and cooked through (internal temperature should reach 165°F or 74°C).

Preheat your oven to 450°F (232°C).

In a large bowl, whisk together the all-purpose flour, baking powder, and salt.

Cut in Butter
Add the cold, cubed unsalted butter to the flour mixture. Use a pastry cutter or your fingers to work the butter into the flour until it resembles coarse crumbs.

Pour in the milk and stir until just combined. Do not overmix.

Using a spoon, drop spoonfuls of dough onto a parchment-lined baking sheet, spacing them about 2 inches apart.

Assemble the Sandwich
Once the biscuits are baked, slice them in half. Place a piece of the fried chicken on the bottom half of the biscuit. Top with the other half of the biscuit.
