Fried Catfish

Prepare the Catfish
Begin by soaking the catfish fillets in buttermilk for at least an hour in the refrigerator. This will help tenderize the fish and enhance its flavor.

Make the Breading
In a large bowl, combine cornmeal, flour, cayenne pepper, salt, and black pepper. Mix well to create an even coating.

Heat the Oil
In a large, deep skillet or fryer, heat the oil over medium-high heat until it reaches 350°F (175°C).

Coat the Fish
Remove the catfish fillets from the buttermilk, allowing excess to drip off. Dredge each fillet in the cornmeal mixture, ensuring a thick, even coating.

Fry the Fish
Carefully place the coated fillets in the hot oil, frying in batches if necessary. Fry for about 3-5 minutes per side or until golden brown and cooked through. Use a slotted spoon to remove the fish and drain on paper towels.

Wash and peel the potatoes, then cut them into thick fries. Soak in cold water for about 30 minutes to remove excess starch.
