Cheese Dip Preparation

Prepare the Cheese Base
In a medium saucepan over low heat, combine the cream cheese and beer. Stir continuously until the cream cheese has melted and the mixture is smooth.

Add Cheddar and Spices
Gradually add the sharp cheddar cheese to the melted cream cheese mixture, stirring constantly until the cheese has melted completely. Then, add garlic powder, onion powder, mustard powder, salt, black pepper, and hot sauce. Stir until all ingredients are well combined.

Finish and Garnish
Remove the pan from heat and stir in the chopped chives. Transfer the cheese dip to a serving bowl and set aside.

Activate Yeast
In a small bowl, combine warm water, brown sugar, and active dry yeast. Let it sit for about 5-10 minutes until it becomes frothy.

Make Dough
In a large mixing bowl, combine all-purpose flour and salt. Add the frothy yeast mixture to the flour and mix until a dough forms. Knead the dough on a floured surface for about 5 minutes until smooth.

Let Dough Rise
Place the dough in a greased bowl, cover it with a damp cloth, and let it rise in a warm place for about 1 hour or until it has doubled in size.

Shape Pretzel Bites
Preheat the oven to 425°F (220°C). Once the dough has risen, punch it down and divide it into small pieces. Roll each piece into a rope and then cut it into bite-sized pieces.

Boil Pretzel Bites
In a large pot, bring water and baking soda to a boil. Boil the pretzel bites in batches for about 30 seconds, then remove them with a slotted spoon and place them on a baking sheet lined with parchment paper.

Once baked, remove the pretzel bites from the oven and let them cool slightly before serving with the beer cheese dip.
