Preparation of Pork

    Trim excess fat from the pork shoulder and cut it into large chunks.

    In a bowl, combine brown sugar, paprika, chili powder, garlic powder, onion powder, salt, black pepper, and cayenne pepper. Mix well to create a rub.

    Generously apply the rub all over the pork chunks, ensuring they are well coated. Let it marinate for at least 1 hour, or preferably overnight in the refrigerator.

    Preheat your smoker or grill to 225°F (107°C).

Cooking the Pork

    Place the pork shoulder chunks onto the smoker or grill grates. Smoke for about 6-8 hours, or until the internal temperature reaches 195°F (90°C) and the meat is tender.
