Dough Preparation

    Make the Dough

    In a large mixing bowl, combine the all-purpose flour and salt. Cut in the unsalted butter until the mixture resembles coarse crumbs.

    Add Water

    Gradually add the cold water, one tablespoon at a time, mixing until the dough comes together. You may need to add more water if the dough is too dry.

    Chill the Dough

    Form the dough into a disk, wrap it in plastic wrap, and refrigerate for at least 30 minutes.

Filling Preparation

    Cook the Filling

    In a skillet, heat the olive oil over medium heat. Add the chopped onion and sauté until translucent, about 5 minutes.

    Add Garlic and Peppers

    Stir in the minced garlic and chopped bell pepper, cooking for an additional 2-3 minutes.

    Add Meat and Spices

    Add the ground beef (or chicken), cumin, paprika, salt, and black pepper. Cook until the meat is browned and fully cooked, about 8-10 minutes.

    If using, mix in the shredded cheddar cheese until melted. Remove from heat and let cool.

Assembly and Baking

    Preheat Oven

    Preheat your oven to 400°F (200°C).

    Roll out Dough

    On a floured surface, roll out the chilled dough to about 1/8 inch thick. Cut out circles using a round cutter or a glass, about 4-5 inches in diameter.

    Fill Empanadas

    Place a tablespoon of filling in the center of each dough circle. Fold the dough over to create a half-moon shape and press the edges to seal. Use a fork to crimp the edges for a decorative touch.

    Brush with Egg

    Place the empanadas on a baking sheet lined with parchment paper. Brush the tops with the beaten egg for a golden finish.

    Bake in the preheated oven for 20-25 minutes or until golden brown. Let cool slightly before serving.
