Method
Prepare and Steam
Bring water to a simmer
Pour 1 cup of water into a medium saucepan fitted with a steamer basket (or use a dedicated steamer). Cover and bring water to a gentle simmer over medium-high heat (just starting to produce steam), about 3–5 minutes.
Add frozen edamame
Add 1 cup frozen edamame (in the pod) to the steamer basket in an even layer. Avoid overcrowding so steam can circulate.
Steam until tender
Cover and steam for 5–7 minutes, shaking the basket or stirring once halfway through, until the pods are heated through and tender but still slightly firm. If using fresh edamame, steam 4–6 minutes; if frozen and very large, up to 8 minutes.
Season and Serve
Remove the steamer basket from the saucepan and transfer the edamame to a bowl or serving plate. Immediately sprinkle with 1 tsp Maldon sea salt flakes while still hot so the salt adheres. If using, drizzle 1/2 tbs sesame oil and toss gently to coat, or sprinkle 1/4 tsp chili flakes/togarashi for heat.
To eat, pop the beans out of the pod with your teeth and discard the pod. Serve immediately while warm.
