Steak Preparation

    Season the Steak

    Sprinkle the NY strip steak with salt and black pepper on both sides. Let it sit at room temperature for about 30 minutes.

    Cook the Steak

    Heat olive oil in a skillet over medium-high heat. Once the oil is hot, add the steak and cook for about 4-5 minutes on each side for medium-rare, or until desired doneness.

    Rest the Steak

    Remove the steak from the skillet and let it rest for 5-10 minutes before slicing.

Fries Preparation

    Prepare Potatoes

    Peel the russet potatoes and cut them into thin strips to resemble fries.

    Heat Oil

    In a deep pot, heat vegetable oil to 350°F (175°C).

    Fry the Potatoes

    Add the sliced potatoes to the hot oil in batches, frying for about 5-7 minutes until golden brown and crispy. Remove and drain on paper towels.

    Season Fries

    Sprinkle with salt while the fries are still hot.

Summer Beans Preparation

    Blanch the Beans

    Bring a pot of salted water to a boil. Add the green beans and yellow wax beans, cooking for 2-3 minutes. Drain and immediately place them in ice water to stop cooking.

    Sauté the Beans

    In a skillet, heat olive oil over medium heat. Add minced garlic and sauté for 30 seconds. Add the blanched beans and sauté until heated through, about 3-4 minutes. Season with salt to taste.

Chimichurri Preparation

    Combine Ingredients

    In a bowl, combine chopped parsley, oregano, minced garlic, red wine vinegar, and red pepper flakes.

    Add Olive Oil

    Slowly whisk in the olive oil until fully combined. Season with salt to taste.

Tomato Preparation

    Prepare the Tomato

    Slice the beefsteak heirloom tomato and arrange it on a plate. Drizzle with olive oil and sprinkle with salt.

Assembly

    Plate the Dish

    On a large plate, place the sliced steak, a generous serving of fries, sautéed summer beans, and the sliced heirloom tomato. Top the steak with chimichurri sauce.

    Serve

    Serve immediately while hot.
