    Prepare the Short Ribs

    Preheat your oven to 300°F (150°C). Season the beef short ribs with salt and black pepper on all sides.

    Sear the Ribs

    In a large oven-safe pot, heat the olive oil over medium-high heat. Add the seasoned short ribs and sear them on all sides until browned, about 3-4 minutes per side. Remove the ribs and set them aside.

    Sauté Garlic

    In the same pot, add minced garlic and sauté for about 1 minute until fragrant. Be careful not to burn the garlic.

    Add Liquid Ingredients

    Pour in the beef broth, honey, soy sauce, and rice vinegar. Stir to combine and scrape any brown bits off the bottom of the pot.

    Cook the Ribs

    Return the seared short ribs to the pot. Bring the mixture to a simmer, then cover and place in the preheated oven. Cook for about 3 hours, or until the ribs are tender and falling off the bone.

    Glaze the Ribs

    Once cooked, remove the pot from the oven and carefully take out the short ribs. Skim off any excess fat from the sauce. If desired, reduce the sauce on the stovetop over medium heat until slightly thickened.

Crispy Shallots

    Prepare Shallots

    While the short ribs are cooking, prepare the crispy shallots. Heat the vegetable oil in a deep skillet or pot over medium heat.

    Dredge Shallots

    In a bowl, toss the thinly sliced shallots with flour and salt until well coated.

    Fry Shallots

    Once the oil is hot (around 350°F or 175°C), carefully add the coated shallots in batches. Fry until golden brown and crispy, about 2-3 minutes. Remove and drain on paper towels.

    Serve

    Serve the tender short rib bites drizzled with the honey glaze and topped with crispy shallots.
